This simple pumpkin and coconut soup can be tossed together before work. On your way home you know that this soup will be waiting for you! All you need is a slow cooker and a little bit of prep time on the front end.

Ingredients
- 1 medium onion diced
- 1/2 tsp ginger powder
- 1/2 tsp garlic powder
- 2 oz butter
- 18 oz pumpkin cubbed
- 16 oz vegetable stock
- 13 oz coconut cream
- salt and pepper to taste

Instructions
- Place all the ingredients into the slow cooker. Stir until pumpkin is completely covered.
- Cook on HIGH for 4-6 hours or on LOW for 6-8 hours.
- After it has cooked, puree the mix until smooth using a stick/immersion blender using the bald attachment. Keep warm until ready to serve.
- Garnish with coconut cream and pepper.
